Week 2- And it keeps falling off!

Right, this has to be the best diet I think I've ever done for weight loss and satiety!


You know you normally get a huge weight loss first week and then you start losing 1lb, 2lbs etc. Last week I lost 6lbs and this week an amazing 5lbs! For those of you who's maths isn't great that's 11lbs in two weeks! And I made an amazing discover this week from www.minimins.com


A slimming world version of KFC- absolutely delicious, here it is! It's free on Extra Easy if you use the brown bread as a healthy extra B.



10 x Chicken Drummers or 4 Chicken Breasts
1 x Tub Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed (optional if you dont like garlic)
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional)
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbes

Method
Place chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.

Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.

Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.

Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.

The start of my life and the end of being fat!

Last week I decided enough was enough. Four years ago I lost a whopping 3 stone! I was 16 at the time. Ever since it's been a constant battle, pounds on pounds off but the pounds eventually one. I'm now inches taller but 6 stone heavier, for the first time in my life (even though I'm only 20!) I'm in the obese category! Me? Obese? How? I can tell you how- too many McDonalds runs with my friends, bottles of wine, meals in and bars and bars of chocolate at the petrol station. This happens to everyone I know but to be 20 and 18st 9lb is not fun! I've been on two holidays this year with friends and both times I've felt fat and unworthy to be on holiday so this is a new year a new start and this time I'm sticking to it!

I decided it's time for a change, obviously things that I've done before haven't worked for me so I decided it's time to try something different. I constantly see on the TV: Jenny Craig, Atkins, Low-carb, Diet Chef to name a few! Every time thinking is this the diet for me? But I've come to realise that's the problem I've got to stop dieting and chose something that can be a lifestyle change (cliche I know but true!).

So I'm in my car daydreaming and thinking what can I do this time? But anyway I get halfway down the A419 and my phone bleeps. I pull over and it's a text from my mother. "A Slimming World magazine has come through the door do you want to join?". I started thinking- me? A twenty year old guy at a weight-loss group? Well I thought it's better than being obese! I went with my mother and joined, we arrived at a Slimming World group in our local church to be greeted by a consultant who explained the programme to us and immediately I thought- con! How can people eat unlimited amounts of rice, pasta, potatoes,meat, fish, fruit and vegetables as they want? And to add even more you're allowed certain healthy extras and have an allowance of syns to spend on naughty food. I weigh in at a staggering 18st 9lbs (my heaviest ever) and am gutted but leave feeling very suspicious of the plan not understanding how it could work. Following this plan means completely forgetting everything I knew before about calories and portions but hey let's give it a go!

I follow the plan and love it. We can eat most of our family meals and they're 'free' on the plan- amazing! And after eating as much free food as I want I can eat 5 jaffa cakes using my syns. I know the weight loss is either going to be non-existant or minuscule (0.5lb). Forward 7 days and it's weight-in day. We go-weigh in and I've lost 6lbs!! Oh my god! I've eaten like a pig and lost 6lbs. I don't understand how it works and to be honest I still don't but I'm keeping faith and looking forward to the next weigh-in! Lets see what the future holds.
